: Three Layer Brownie Bars

Ingredients:

Brownie Mix
Mini marshmallows (about 2 cups)
12 ounces semi-sweet chocolate chips
1 cup peanut butter
4 cups rice krispies

1. Prepare brownie mix as directed in a 9x13 pan. As the brownies finish baking, remove them from the oven and cover with an even layer of marshmallows. Turn off the heat and return the brownies to the oven until the marshmallows melt, but not brown. Cool the brownies.

2. Melt the chocolate chips and peanut butter together, then
add the rice krispies. Spread the krispy mixture over the cooled brownies. Chill the brownies until the rice krispy layer is firm.

Corn

Ingredients:

½ cup unpopped popcorn
½ cup karo syrup
½ cup butter (or Smart Balance)
1 cup brown sugar
1 teaspoon baking soda

Directions:

  1. Preheat oven to 250 degrees.
  2. Pop popcorn in air popper or however you normally do
  3. Place karo, butter, & brown sugar in a pan.
  4. Heat (medium flame) until melted and bubbly at edges
  5. Heat (lower flame) for another 5 minutes, stirring constantly.
  6. It’ll be very bubbly.
  7. Remove from heat, add baking soda & stir
  8. Place popcorn on parchment lined cookie sheet (with sides)
  9. Drizzle mixture all over the popcorn and mix thoroughly
  10. Bake for 15 min.
  11. Stir
  12. Repeat steps 10 & 11 until it's baked for an hour total

Let cool, break it up, & enjoy



Kim's Holiday Penguin Extravaganza

Ingredients:

cream cheese

pitted black olives
carrots
cheese ball igloo
crackers
toothpicks

Ingredients:


1 cup margarine
2 tspn. vanilla
1/3 cup sugar
red & green sugar
2 tspn. water
2 cups flour
1 cup chopped nuts

Directions:


Preheat oven to 325 degrees
Cream margarine and vanilla; add sugar, creaming mixture until light n fluffy. Blend in water. Stir in flour, mixing well. Add nuts.

Shape into 1" balls. Roll in colored sugar. Bake 1" apart on ungreased cookie sheet.
Bake for 10 min.

this month's favorite recipe: from julie!

Cold Sesame Noodles

5 tablespoons sesame seeds

1/4 cup peanut butter
2 cloves garlic

1 tablespoon fresh grated ginger (about 1-2 inches)

5 tablespoons soy sauce

2 tablespoons rice vinegar
1 teaspoon Tabasco sauce
2 tablespoons light brown sugar

1/2 cup hot water 1 tablespoon salt
1 pound fresh Chinese egg noodles or 1 pound dried spaghetti
4 scallions, sliced thin
1 carrot, peeled and grated

1 red bell pepper, sliced thin

Toast the sesame seeds in a skillet over medium heat, stirring frequently, until golden and fragrant, about 10 minutes. Reserve 1 tablespoon sesame seeds. In a blender or food processor, puree 4 tablespoons sesame seeds, peanut butter, garlic, ginger, soy sauce, vinegar, Tabasco, and sugar until smooth, about 30 seconds. With the machine running, add hot water 1 tablespoon at a time until the sauce has the consistency of heavy cream. Cook the noodles in 6 quarts salted boiling water. Drain, then rinse with cold water until cool. Toss the noodles with the sauce and vegetables in a large bowl; top with the reserved sesame seeds.

Buffalo Chicken Dip

8oz. Cream Cheese
1/2 Cup Blue Cheese Dressing
1 Cup Frank's Red Hot Sauce
2 pounds of cooked chicken (OR - buy a prepared roasted chicken from Giant Eagle)
1 Cup Shredded Monterey Jack Cheese

In a 9x9 baking dish, spread cream cheese.
Next, spread the blue cheese dressing over top.
In a bowl, mix shredded chicken and Red Hot (use more or less depending on desired spiciness). Spread the chicken mixture over the dressing. Sprinkle cheese on top.

Cover with foil.
Bake at 350 for 30 minutes.
Serve with crackers, chips or celery.

With so many celebrity chefs specializing in Italian foods, finding great recipes for this month's dinner is a snap!

Here are FIFTY-NINE recipes from Mario Batalli on FoodandWine.com. Here's an especially interesting-looking one with butternut squash, and I think I may try this one.

AllRecipes.com has an entire Italian section of their site. I challenge you to find some unexpected Northern Italian recipes there.

Then there's Giada DeLaurentis. I seriously did NOT like her, until I saw her bio on Food Network. She seems to be much more genuine than I'd previously thought, and she's got a bevy of Italian recipes to offer, from her grandma and other family in Italy.

I personally can't stand Michael Chiarello (sorry)...he's like fingernails on a chalkboard to me...BUT his recipes are great, and very Italian.

Amy's Mango Salsa

Ingredients:

1 large extra-ripe mango
0.5 large vidalia onion
2 green onions
1.5 medium green jalapenos
3 cloves garlic
juice of 1 lemon
sugar
pepper
salt
Instructions:
1) peel, core, & chop mango
2) cut a large vidalia onion in half, peel and chop 1/2 of it with your quick-chop
3) chop 2 green onions, white & tender greens only, throw ends away
4) cut jalapenos in halves. pull out seeds and inside pulpy part. chop 1.5 jalapenos. be careful not to get too much jalapeno juice on your hands, and DON'T touch your eye after handling them.
5) peel & chop (or press) 3 cloves garlic
6) mix all in a bowl, add juice of 1 lemon
7) add about 1 teaspoon sugar, 1 teaspoon fresh ground pepper, + 1/2 teaspoon salt
8) transfer all to a chopper, blender, or food processor for a quick go-round, this is jsut to break up the mango and make it nice & saucy. if you chop your mango small enough, you won't have to do this part.
9) let it live with itself in the fridge for at least 3 hours.
10) remove from fridge an hour b4 serving to bring to room temperature
enjoy with chips and/or on chicken, tamales, or burritos
